A Healthy Recipe for your New Year’s Eve Party from the Kitchen of Mrs. Proodian

This past Wednesday, I shared some delicious and nutritious foods that your friends and family will love when everyone gets together for the holidays. My wife, Stacy, a fantastic cook who loves to prepare delicious, healthy meals for our family, reminded me about a recipe she makes for roasted corn and avocado dip. It is so good, and good for you, that I had to share it.

This recipe for roasted corn and avocado dip, inspired by the Moosewood Restaurant Low-Fat Favorites cookbook, is easy to make and always gets rave reviews.



  • 1/2 cup corn, fresh or frozen
  • 1 teaspoon minced garlic
  • 1/2 minced jalapeño pepper (use gloves!)
  • 1/4 cup minced onion
  • 1 tablespoon cumin powder
  • 1 tablespoon olive oil
  • 1 fresh tomato, cubed
  • 1 fresh avocado, cubed
  • 1 tablespoon fresh lime juice
  • 2 tablespoon apple cider vinegar
  • salt and pepper

Preheat broiler. Combine corn, garlic, jalapeño, onion, cumin, olive oil, salt and pepper in a pan and roast under the broiler until the corn turns golden brown. Give it a toss while browning.

While the roasted corn mixture is cooking, add the cubed tomato and cubed avocado to a separate bowl and toss with the lime juice and apple cider vinegar. Add salt and pepper to taste.

Remove the roasted corn mixture from the broiler and allow to cool. Combine with the avocado and tomato mixture, and add salt and pepper to taste. If you like a little extra kick, add a dash of cayenne pepper. Serve your roasted corn and avocado masterpiece with organic, low-fat tortilla chips and cut veggies.
